There are a lot of course that are in demand in Australia because of long term and short term skills shortages in few fields. Courses in demand are like accounting, hair dressing, network security, commercial cookery, education, community welfare, etc and many more. There is an MODL (Migration Occupation in Demand List) for Australia on the Australian immigration website i.e. www.immi.gov.au where in all the skills shortages courses are mentioned.
